This Fiano was pressed and cold settled, before being transferred to an egg-shaped vessel for ferment and maturation sur lie for 7 months, stirred once a month to add lees texture and mouth weight to the wine – an old Georgian tradition of winemaking from centuries ago.

Tasting Notes: Lifted white florals and lemon myrtle dominate the nose, before fresh grapefruit and citrus rind floods a palate leaving a salivating mineral finish.
